Artichoke, Mushroom & Spinach Lasagna

Recently I checked out a book from my local library Arizona Best Recipes published by Arizona Highways with recipes from some of the places they identified as the state’s “best restaurants” over the years. The book has beautiful photography by Paul Markow. I was delighted to see so many recipes from places all over the state and think it would be fun to try and go to all the restaurants featured in the book. Last weekend I decided to try the lasagna recipe from Cafe Roka in Bisbee.

The dish was very rich with the parmesan cheese bechamel sauce.  I highly recommend checking out the book to get the recipe and if you want to try some of the best dishes Arizona has to offer.





Leek, Potato and Spinach Quiche


This quiche reminds me of scalloped potatoes in the taste and texture.

Leek, Potato and Spinach Quiche

  • 1 pie crust
  • 1 leek chopped
  • 1 shallot minced
  • 2 Yukon gold potatoes
  • 1 cup spinach (remove stems)
  • 2 eggs
  • 1 – 1/2 cups half & half
  • 4 oz. cheddar cheese shredded
  • 2 tbsp butter
  • 1 tsp dill
  • salt and pepper to taste

Chop leeks and shallots and saute in butter for 5 – 10 minutes. Boil potatoes until soft approximately 20 minutes. Cool potatoes and slice into 1/4″ slices. Remove stems from spinach. Heat pie crust for 5 minutes on 325 degrees. Line pie crust with cooked leeks and shallots. Cover them with spinach and cooked potatoes. Top with shredded cheddar cheese. Whip half & half and eggs together adding dill, salt and pepper. Cover with the half & half and egg mixture. Heat on 375 degrees for 35 – 40 minutes or until golden brown.





Spinach Mushroom & Zucchini Lasagna

  • 1 package oven ready lasagna pasta
  • 1 – 24 oz jar tomato sauce
  • 1 – 32 oz container ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup Parmesan cheese
  • 2 zucchini squashes sliced
  • 1 – 8oz container baby bella mushrooms sliced
  • 1 – 10 oz jar sun dried tomatoes
  • 1 – 10 oz box frozen chopped spinach
  • 1 egg
  • 1 tsp minced garlic
  • 1 tsp Italian spices
  • Salt and Pepper to taste

Thaw out the spinach and drain out all the water. Saute the mushrooms and set aside. Mix the ricotta cheese, egg, spinach, sun dried tomatoes, garlic, Italian spice, salt and pepper. Spread a layer of tomato sauce on the bottom of rectangular shaped baking dish. I used a 12″ X 9″ pan. Cover the sauce with three of the lasagna noodles, Spread a layer of ricotta cheese mixture on the pasta, then a layer of mushroom & zucchini, then a layer of tomato sauce and a layer of mozzarella cheese. Continue layering the same way. Top the lasagna with the Parmesan cheese. Cover in foil and bake at 375 for 30 minutes. Remove foil and bake for another 5 minutes.


Spinach Salad with Pomegranate Dressing


Spinach Salad

  • 1 – 6 oz container of fresh spinach
  • 2 Gala apples
  • 4 scallions
  • 1/4 cup crumbled blue cheese
  • 1/4 cup roasted pine nuts

Chop onions and apples and set aside. Toss all the ingredients into a large mixing bowl.

Pomegranate Dressing

  • 1/2 cup of olive oil
  • 1/2 cup balsamic vinegar
  • 1/4 cup Pom pomegranate juice
  • 2 Tbsp honey
  • 1 tsp Dijon mustard
  • 1 tsp Italian spices
  • Salt and Pepper to taste

Whisk the ingredients in a mixing bowl. Makes a little over a cup of dressing.


Spinach Salad with Caramelized Pecans & Avocado Dressing

Spinach Salad

  • 1 bunch of baby spinach
  • 1 cup pecans caramelized
  • 1 cup seedless red grapes
  • 1/2 cup gorgonzola cheese
  • 2 tbsp butter
  • 2 tbsp brown sugar

Wash, rinse and dry spinach. Cut pecans in half, heat butter and brown sugar in a small skillet and stir until caramel in color. Add the pecans and continue to stir until they ar coated. Remove pecans and set on a flat surface to cool. Slice the grapes in half. Toss the spinach, cheese, grapes and pecans together in a large bowl and serve with dressing.

Avocado Dressing

  • 1 ripe hass avocado
  • 1/4 cup olive oil
  • 1/4 cup water
  • 1/4 cup crumbled gorgonzola cheese
  • salt and pepper to taste

Mix all the ingredients in a blender or food processor. The dressing will be thick. If you want it more fluid add more water.
