Fig & Plum Cake

Fig & Plum Cake

  • 10 ripe figs
  • 3 ripe plums
  • 2 cups of flour
  • 1- 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup butter
  • 2 eggs
  • 1/2 cup milk
  • 2 tsp cinnamon
  • 1 – 1/2 tsp baking powder
  • 1 Tbsp vanilla

Preheat oven to 350 degrees. Line a round cake pan with parchment. Remove the peel from the plums by blanching them in hot water and then placing them in an ice bath. Slice plums and figs. Mix the brown sugar and 1 tsp cinnamon together. Roll the figs and plums in the brown sugar mixture and line the cake pan with them. Cream the sugar and butter together in a large mixing bowl, add the cinnamon, vanilla, baking powder, salt, flour and milk. Pour the batter over the figs and plums. Bake for 1 hour checking to make sure the cake is done in the middle. Let it cool and when cooled turn over on a cake plate. Serve with vanilla ice cream.

Chocolate Hazelnut Truffles

Chocolate TrufflesChocolate  Hazelnut Truffles

  • 6 oz. dark chocolate (Endangered Species)
  • 1/4 cup coconut oil
  • 1/4 cup chopped hazelnuts
  • 3 tbsp water
  • 1 tsp good vanilla
  • 1 pinch sea salt
  • cocoa powder to roll them in

Chocolate

Place ingredients in a small pan, heat on low and stir to dissolve ingredients. Pour into small glass dish. Allow to cool (about 2 hours). Roll chocolate into small balls, roll them in hazelnuts  and return to refrigerator to chill. When they are chilled, dust truffles in cocoa powder. Makes 12 small truffles.

 

Lemon Lime Indulgence

This dessert is inspired by the key lime pie mini indulgence at Seasons 52. I’ve gone there many times and had one, two or three of these.  I made these in crystal champagne glasses which makes them twice as large as a mini indulgence. You could make them in a shot glass too.

Lemon Lime Indulgence

  • Filling –
  • 1 cup cream cheese
  • 1 cup sour cream
  • 1/2 cup sugar
  • 1/4 cup lemon curd
  • 4 Tbsp key lime juice
  • 1 tsp lemon zest
  • 1 tsp lime zest
  • Crust –
  • 1/4 cup pistachio nuts
  • 1/8 cup sugar
  • 2 Tbsp butter

Mix all the filling ingredients in a mixer until creamy and blended. Put pistachio nuts and sugar in the food processor until fine and powdery. Heat the butter and add to the nut mix. Spread the nut crust at the base of your glass. Carefully place the filling on top leaving the crust in tact. Chill for a few hours. Garnish with lemon and lime zest and serve. Makes four large servings.

Cherry & Chocolate Chunk Ice Cream

This ice cream is as good as it is pretty. I like to experiment with my ice cream maker trying out combinations. One summer a friend gave me a box of peaches. One of the recipes I experimented with was peach cobbler ice cream. Yum! I use a Cuisinart Frozen Yogurt-Ice Cream & Sorbet Maker. It’s simple and easy to use. The containers to store the ice cream I purchase from sweet bliss containers on Amazon.

Cherry & Chocolate Chunk Ice Cream

  • 2 cups whipping cream
  • 1 cup milk
  • 3/4 cup sugar
  • 1 cup dark chocolate chopped
  • 1 cup bing cherries sliced in half
  • 1 Tbsp vanilla

Mix the whipping cream, milk vanilla and sugar in a bowl, add the cherries and chocolate. Pour the liquid into the ice cream freezer bowl and turn it on. Let it thicken which should take about 2o minutes. Scoop out into your ice cream container and let it freeze for two hours. If you cannot wait, you can eat it right away.

Makes 1 quart of ice cream

Easter Baking

Are you going to do any baking for Easter this year? Baking cookies for Easter is my favorite occasion for decorating cookies with royal icing. My inspiration came from a set of springtime cookie cutters which have a lamb, bunny rabbit and a butterfly. Since Easter is only a little over a week away, it’s time to get inspired. Here are some sugar cookies I’ve made in the past. I use Martha Stewart’s sugar cookie and royal icing recipe. I better get busy if I am going to bake any this year.
